- Prepare 6 tbsp mirin sauce
- You need 4 tbsp sake

- Take 2 tbsp chicken powder
- Get 5 gloves of garlic (minced)

- Get 2 tbsp oyster sauce
- Use 3 tbsp cooking wine
- You need 2 stalks bak choy
- Provide 2 stalks spring onion (cut)
- Get 2 handful bean sprouts
- Prepare Egg noodles / rice noodles
- Prepare sprinkle of sichuan pepper powder
Instructions to make Dan Dan Noodles:
- Make the seasoning sauce and set aside.
- In a pot, we are making the broth by adding one cup of water, soya milk and chicken powder. Cover the lid and use medium heat, bring them to light simmer. leave it.
- In another bigger pot, add 1.5 liter of water, add pinch of salt
- In a wok, add 2 tbsp chili oil (oil only), garlic and ginger, bean paste, oyster sauce. stir fry the ingredients.
- After one min, add pork into the wok and continue stir frying.
- Add cooking wine into the wok. Continue cooking until it's done. Set aside.
- Blanch bak choy, bean sprouts in a pot, set aside.
- In a pot, boil water and add noodles in and cook until done.
- In a serving bowl, add the seasonings and broth.
- Add noodles, bean sprouts, bak choy, pork, spring onions, sesame seeds, egg. sprinkle powder on top.
