Instructions to make Pav Bhaji:
- In a cooker, boil all the vegetables together. Peel potatoes and brinjal, before putting them inside a cooker. Add a glass of water, salt and a pinch of turmeric.
- In a pan or kadhai, put some oil and let it heat. Add cumin seeds, when it starts crackling, add chopped onion and saute it for a minute then add ginger garlic paste, saute it again and add green peas. Cook it until onion changes to light golden colour.
- Now, add chopped tomatoes and a pinch of salt and cook until tomatoes become mushy.
- When it leaves oil, add turmeric powder, red chilli powder, garam masala powder, coriander powder and paav bhaji masala. Mix it well and pour some water to avoid over cooking of mixture.
- Now, add boiled vegetables and try to mix it well and mash it altogether. Add water and salt if required. Cover & cook for 6-7 minutes more on low to medium flame.
- On another pan or tawa, apply some good butter on paav and cook on both the sides till it become crunchy and golden brown in colour.
- Sprinkle chopped coriander leaves over the bhaji and serve hot with Paav and chopped onion, lemon and chutney.
