  1. You need 1 packages Mushrooms
  2. You need 2 tbsp Olive oil
  3. Take 2 slice Bacon
  4. You need 1 Thinly minced shallots
  5. You need 1 packages Mushrooms (recipe calls for 8 cups but I had limited people eating)

  7. Take 2 tbsp Thyme + Rosemary
  8. Prepare 1 tbsp Margarine
  9. Get 1/4 Ground pepper
  10. Prepare 1/4 Salt
Steps to make Sauted Mushroom & Caramelized Shallots:
  1. Heat oil in a heavy skillet over medium heat. Add bacon. Add shallots. Cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Stirring occasionally, until softened and browned, 3 to 4 minutes and when bacon is down. Transfer to paper towel
  2. Remove bacon and shallots once shallots are golden brown and bacon cooks. Transfer to paper towel to absorb oil. Once bacon cools, chop into tiny pieces!
  3. Bring the pan back to medium heat, add mushrooms, cover and cook, stirring once, until the mushrooms release their liquid, (3 to 4 minutes) Uncover and cook until the liquid evaporates, about 1 minute. Add water and scrape up any browned bits.
  4. Return bacon/shallots. And cook for about a minute. Stir in the thyme/Rosemary (use sage if you have it!!) butter, salt and pepper Set the table and serve hot!!
